You can make yuja-cheong and turn it into a delicious tea. It’s really easy and so tasty! You can mix it with hibiscus tea for a refreshing winter drink. The peel is great to candy, and you can also use the juice in place of lemon juice in recipes.

I’m a bit confused by the recipe page. It sounds like the tea is made from marmalade, but the traditional tea is made from the leaves. I’ll have to look into it more. I don’t have access to the leaves yet, but I could ask.

The recipe I followed was this one: Yuzu Marmalade 柚子のマーマレード • Just One Cookbook. It’s a great way to use the fruit. If you want something more traditional, try this recipe: Yuja Tea (Korean Citron Tea) - My Korean Kitchen.

Chop them up, including the peel and flesh, remove the seeds, add a lot of sugar, and cook them in a pan until it becomes marmalade. It’s delicious on just about everything. You can also candy the peel and use it in snacks. Try making Yuzu squash with juice, cane sugar, and some carbonation. Yuzu zest in vinaigrettes or salads is amazing too!

I have a small Yuzu bush, but the fruit is a bit disappointing. It’s full of seeds, and the juice doesn’t taste quite right. Maybe it’s too young or just not suited to the Portuguese climate.
