How much do you harvest each year? I started a bed a few years ago, and this spring will be the first time I can harvest. Any tips so I don’t overdo it?
We planted 3 rhizomes 5 years ago, and we harvest 8-10 spears daily during spring. It grows really fast! They can get thick, but they still taste great even though they don’t look as delicate as what you see in stores. Hubby says leave a few spears at the end of the season to help the plant store energy for next year.

Hubby corrected me—it’s actually 10 plants we’ve had for 8-10 years. By the end of the season, I’m usually tired of asparagus, but it’s still fun to grow. Make sure to mulch after the first frost!

Cut the spears with a knife at ground level before the tip opens up.
This is what happens when you don’t harvest the spears—they grow tall and become ferns.

The part we eat is the first spear of the plant. Just cut it at ground level before it opens up.
They come up really fast in spring. You cut them, and more spears will grow. It’s staggered.
Looks like a mess to me.
