You can plant them now, or even earlier when the roots first appeared. If you need more prep time, the plant will keep growing roots in water for about two weeks before it starts using up its reserves.
Also, the roots growing high up isn’t unusual—it’s part of the plant’s natural response to growth hormones collecting at the nodes. You might’ve seen roots growing from the leaf nodes, which is why it’s good to remove lower leaves to encourage rooting.
