Nice! I love beets too. Pickled is awesome, but roasted with olive oil, salt, and pepper is another favorite of mine. Some people say beets taste like dirt, but to me, they’re sweet and delicious.
Try grating fresh beets and cooking them with just a bit of water. Then add some sweet cream, a pinch of sugar, salt, pepper, and a tiny dash of vinegar. It pairs really well with potatoes and meatballs. It’s one of my favorite ways to prepare them!

Beets taste like dirt to me. Apparently, it’s because of a compound called geosmin, which is also found in trout. I don’t like trout either because it tastes like mud!

The first time I grew beets, I didn’t know you could eat the greens. When I thinned out the seedlings, I tried one, and it was the best thing I ever tasted! I made a salad with the rest of the greens and it was fantastic.
If you like beet greens, you should try growing chard. It’s related to beets and super easy to grow.

The key is thinning them early in the season. It gives the roots more room to grow.
