First successful cauliflower plant! Need some advice

Hey everyone! I’m super excited because I finally grew my first cauliflower plant successfully. It looks a bit different than I expected, though. I was hoping for the yellow and green colors based on the varieties I planted, and I got those, but the flowers are spaced out instead of being tightly bunched like traditional cauliflower.

Could this be due to a nutritional or water deficit at some point? I’d appreciate any advice or input you have. Thanks for your time!

For reference, I’m in Agzone 8A, Orange County, California.

It’s starting to bolt, which means it’s preparing to flower and go to seed. You should harvest it soon before it loses quality.

The spacing happens when it starts to bolt or “go to seed.” Next time, harvest it while the head is still tight and compact.
